Flying Fish has long been a favorite with locals, and the new chef, Robert Curry, is taking his time to fine tune the popular menu. Curry comes to Disney World from Domaine Chandon in Napa Valley, and his style is a reflection of his days in wine country. Try, for instance, his chardonnay steamed mussels with parsley-pastis sauce and grilled sourdough. Or a creation from his training with Wolfgang Puck: a frisee salad with oven-roasted beets, goat cheese, walnuts and navel orange vinaigrette .

Entrees range from a sushi-grade slice of yellowfin tuna with summer rolls to a hearty char-crusted New York strip with roasted Yukon gold potatoes and asparagus. He's keeping the popular potato-wrapped red snapper on the menu, but has added his handmade ricotta ravioli with a piquant sauce of tomatoes, olives, capers and fresh basil.

A solid wine list gives plenty of picks to match his creations. And save room for the black-and-white creme brule with berries, or a light trio of sorbets.

    Chef Jens Dahlmann has brought new life to old dishes at the Flying Fish Cafe. A new addition of a heavy cream reduction to the mussels is a great alternative to the usual tomato based sauce. The ahi tuna paired with the oriental vegetable strudel is awesome. Some of the old classics such as the potato wrapped snapper, hearts of palm salad and grilled mahi (although the sides may change with the mahi change from time to time), are still there. So, if you havnt been in a while, take another visit to the Flying Fish. Say hello to the new chef!

    The food is wonderful. The servers are a little snobby considering it is a Disney restaurant.

    The Service was great but they ran out of food, closed the bar at 10pm, (too early) and the manager was rude. Over Rated. It will be hard to return.

    Without a doubt the best of the best. We have done Disney restaurants for 20 years and tried them all. The Flying Fish is the ultimate dining experience. The wait staff, especially Bob and Bradlee, are the creme de la creme, the best of the best. We are there every few months and always have at least two reservations at the Flying Fish each visit to Disney. The wine list is so diversified. The potato wrapped snapper is one of the best meals you will ever eat. Don't forget a lava cake.
