34 Years ago I stumbled into this pizza place owned at the time by Dominic and Vito Acquari. Vito unfortunately has passed on and Dominic retired and has returned to Sicily. I used to buy 30 Pizzas every week for my students all costing but $10.00 with the guarantee if they were not the best pizzas they had ever had there would be a full refund. NEVER ONCE was I asked for a refund. I tire of Hawaiian Pizza, and gourmet artsy television cooking channel max profit snob bland pizza, and the zen macrobiotic free range soya green tea heart healthy pablum masquerading as pizza.
I care not if it is thin and crispy style, or pie-like. I seek and appreciate good taste and good after taste. Etna's has evolved and even changed back to what is nearly was, Probably because past owners have retained the services of pizza spinner extraordinaire Bruce Schweda for about 25 years now. I mostly order the number 5, pepperoni and the large. The bread is thick, yes, you can order a thin, and it has a sweet after taste. I once saw a truck from Los Angeles, carrying "Campagnolo Flower" at their back door. The sauce which I think is the key is wonderful having a slight hint of either red chili flakes or even cayenne in it. You do not have to pay a bribe for extra sauce. The pepperoni is plentiful and tasty, and occasionally they have even made me pizzas using the ends of the pepperoni sausages perhaps a half inch thick and plentiful, OH, and the pepperoni goes under the cheese. Don't ask for extra pepperoni, the question is moot, so is asking for extra cheese unnecessary, no matter how times change, customers old and new will never be short changed. I am a bit sad letting this secret out, and having a job that once took me around the world at least once a month, I have tried pizza most everywhere. San Diego has dozens of major leauge pizza places on par or better than any in the world, I just simply like Etna's finding it consistently heavenly. The newest owners have done well redecorating and upgrading the interior. Neighbors far and near, (I live now 480 miles away) enjoy to the tune of about 500 pizzas a night, till 3:00 A.M., starting from 11:00A.M. My name is Larry, I do not know the owners now, and this is unsolicited.
