There are Chinese restaurants in North Jersey, and then there is Golden Dynasty, in a class of its own. Many of the dish names are familiar, but the elegant decor, courteous and attentive waitstaff, and admirable commitment to providing an Asian dining experience that aims beyond the fried-egg-roll and wonton-soup model puts this Hillsdale landmark on a different level. Shrimp are always crispy and fresh, "hot" and "spicy" are mere guidelines for you to dictate your comfort level, and a dish like golden chicken tastes less like it was fried in cement and more like breaded poultry thoughtfully cooked in a creative sauce. Two particular dishes show off Golden Dynasty's adept handling of fare from land and sea. Seafood lovers zero in on Neptune's Basket, a menagerie of scallops, lobster, crab meat and jumbo shrimp surrounded by mushrooms, snow peas and fresh red pepper over a bed of crispy noodles. The other gem is the Bird's Nest Deluxe -- sliced beef and pork, white-meat chicken, and shrimp mixed with veggies and water chestnuts in a brown sauce over those same crispy noodles. Those two complementary approaches show Golden's classy creativity and dynastic ambition.
