The Dish: P.F. Chang's -- the brainchild of Paul Fleming, executed by cuisine expert Philip Chang -- first opened its doors in Scottsdale, Ariz., in 1993. Fleming sought elegance and innovation, authenticity and exploration -- none of it easy in a chain restaurant. But he succeeded: His China Bistro is a Hot Concept winner, as well as Best Chinese Restaurant Award Winner. Chang's fiery stir-fried spicy chicken is a new take on General Tao's, and VIP Cantonese chicken mimics Peking duck preparation. Honey shrimp are battered and crispy, and stir-fried Cantonese scallops or shrimp are seasoned with garlic and yellow chives. Mongolian beef is quickly cooked with scallions and garlic. Wines compliment your entree choices.

The Atmosphere: Although ''elegant'' is rarely a word used to describe chain restaurants, P.F. Chang's hits the bull's-eye. Gracious, inviting and innovative, P.F. Chang's offers a mysteriously haunting and glamorous dining setting, accented by pieces from the Ming and T'ang dynasties. Hand-painted murals and low lighting complete the mood. In some areas of the country, Fleming has instituted Pei Wei Asian Diner, the quick and more casual eating experience. But true fans will remain loyal to P.F. Chang's original vision. -- Tracey E.     A chain restaurant? It is good and all, but come on folks..show some knowledge and ability to research. There are tons of Asian places that blow this away. If you want quick lunch or casual dinner..sure, but best in Raleigh. LOL! Now that is funny.

    The quality of the food here was great but it certaintly was not excellent Chinese. If one was to eat in Boston they would have great Chinese food. I could even add NYC to this list for great Chinese but when one lives down south the Chinese is different and for down here P.F. Changs has great food. P.F. Changs is not strict Chinese and neither do they claim to be. In China town Boston MA you will not find a Chinese bistro they simply are not known that is why P.F. Changs is in the theator district of Boston.

    In my opinion PF Chang's is the best that Raleigh has to offer. I drive from Clayton past all of the other Chinese joints just to have the best. They have never let me down.

    There are chinese resturants and then there are chinese resturants. This is in the latter class. Dont expect what you get from your local corner chinese place. This is class, food is excellent (you'll think you've never tried chiese food before if you are used to the other joints). Expensive, but worth every penny.

    I wonder if anyone who gives this establishment more than 1 star has ever eaten in a NYC, SF, or DC Chinese restaurant? Take away the sicky sweet plum sauce that drowns everything and one doesn't find much left to comment upon.
