When a restaurant's motto reads ''discover your inner redneck,'' you know you are onto something rather special. Word of mouth has propelled UBQ into orbit. That's no surprise since its three young partners -- one a former chef elsewhere -- have struck barbecue gold with their succulent and juicy ribs, house-made sauces, thick slabs of smoky beef brisket, inventive egg roll appetizers and hot-from-the-oven homemade apple pie with caramel sauce. Satisfied and barbecue-mad folks come back here often. It's one place where cooking rules. Come once and you'll come often. Just don't count those calories when you fork through an order of cheese fries. The lunch and dinner menus are the same.
