Opened in the mid-90s by a barbecue enthusiast from Mississippi, this Claiborne establishment attracts not just locals but quite a large gang of regulars from out of town. Ms. Hyster's is a working-class establishment with bare bones decor -- there are tables, a few posters honoring civil rights leaders and a counter to order at. The barbecue is of the sweet, hickory-smoked variety with tender meat that barely clings to the bone. There's certainly a soul food influence and side items include collard and mustard greens, black-eyed peas, macaroni, cornbread and delicious, home-cooked pound cake. While it's darn good to begin with, massive portions at minimal prices keep customers coming back. Ms. Hyster's was originally supposed to be called "Ms. Hester's" but when the sign was printed with a misspelling, they just left it above the pit. -- Craig Guillot.
