The Dish: Roberto Robeldo, founder of the Robertos Taco Shop chain located throughout the American Southwest, began his career by opening a tortilla factory, and soon after set up his first taco stand in San Diego. What made the place a hit back then can still be found at every Robertos location -- combo plates and burritos offering a generous supply of grub at a price to fit any budget. The three rolled tacos and guacamole are a popular choice, but you cant go wrong with any of the Mexican specialties here, from frijoles refritos to menudo and posole.

The Atmosphere: Taco stands are rarely featured in Architectural Digest, and Robertos is no exception. But each of its numerous valley locations are clean and comfortable, and most are open all night, attracting an interesting mix of graveyard-shift workers, college students and casino hoppers. -- David Hofstede
