Created as a sort of flapjack-house concept in 1950s Oregon (imagine that), this House never quite caught fire on the way IHOP did. Odd, because the pancakes here are miles better. There are about a hundred franchises nationwide today, including this one cranking out amazingly fun permutations of breakfast in the no-longer-wilds of West Caldwell. (Other branches occupy Whippany and Fort Lee.) There's a Paul Bunyanesque, woods-camp quality to some offerings -- the proprietary sourdough-based batter is used to fire up waffles, pancakes and crepes. Some of the best ways to eat 'em: thick 49'er-style hotcakes, lace-thin Swedish pancakes, fruity blueberry pancakes and crunchy Georgia pecan pancakes. Or get the fun pigs-in-a-blanket pork links wrapped in silver-dollar-size cakes and dusted with powdered sugar. Sick of hotcakes? Try some sourdough French toast, some of the great special-order bacon or the gloriously pulpy fresh OJ. Couples might want to go for the ginormous, delicious apple pancake, with its special cinnamon glaze; it feeds two, covers a big plate and takes a quarter-hour to bake in the oven. Bring a newspaper -- it'll come in handy while you wait.

    I moved to Caldwell about 5 years ago and until recently had never been to the Pancake House. After receiving so many rave reviews from my friends I decided to check it out myself. The wait was long, which didn't bother me. My waitress was wonderful, she could hold a lively conversation and made sure all of my needs were taken care of. The food, just as everyone said, was fantastic. At the suggestion of my waitress I got the Apple Pancake, which was amazing. The only problem I found with the restaurant was the treatment of the staff by the owner. I have never seen someone belittle and humiliate another person in front of others the way he did. When I first arrived he was yelling at a hostess in front of the long line of customers. Then, when my waitress made an insignificant mistake I had to watch him reprimand her directly in front of me. I assured him it was not important, but he continued to shout at her, saying it would be her last mistake and that she would have to pay for the error out of her own pocket. I felt so bad for her that I ended up leaving her double the tip I would have originally. I don't think its right for anyone to be spoken to the way she was for something as insignificant as her mistake, especially in front of other people. His behavior was so offensive to me I find it hard to go back and give them my business, regardless of how good the food may be.
